We’re chefs turned distillers, passionate about bringing authentic spirits to Australian lips.

It all began over a decade ago when we decided to pursue distilling full-time. The goal was to create authentic Australian spirits to be poured in venues and households across the country.

First came White Light Vodka, launched in 2014 followed by Triple G Gin in 2019.

Our small batch passion project, Walter Whisky, came next, launching in 2023 after 5 years ageing in Hungarian oak.

A few years ago we set our sights on agave spirits.

Choosing to honour the ancient traditions of Tequila making, we turned to the red soils of Jalisco, Mexico for Luna Hueca production.

Tequila vs mezcal

An Australian small business producing Tequila? Yep, you read that right!

What makes Luna Hueca a Tequila as opposed to just a mezcal?

Tequila is a specific type of mezcal, produced only in regions surrounding the city of Tequila.

Whilst Mezcal can be made from around 50 species of agave, Tequila can only be made with Blue Agave (aka. Agave Tequilana).

UNESCO WORLD HERITAGE

In 2006, the Agave Landscape and Ancient Industrial Facilities of Tequila were officially declared a cultural UNESCO World Heritage site.

Tequila has been produced in this region since the 16th century and fermented agave drinks have been made here for at least two millennia.

All Tequila produced in this region is registered with the Consejo Regulador del Tequila (CRT) and is assigned a distiller registration number.

This ensures that all Tequila is actually Tequila from Tequila!

Why we can call it ‘Tequila’

We have official approval from the Mexican authorities, a process that took more than two years. Tequila is regulated by the CRT (Consejo Regulador del Tequila), the Tequila Regulatory Council, which ensures it is produced, bottled and labelled according to strict NOM standards.

TEQUILA VS AGAVE SPIRIT

Our tequila is made in Jalisco, Mexico, from 100% Blue Weber Agave. By law, only this agave grown in Mexico can be called tequila. Without NOM and CRT approval, it would have to be labelled as agave spirit.

Australian agave spirits are made from locally grown agave and can use different varieties.

The key difference is that tequila must come from Blue Weber Agave grown in Mexico.

Why bottle in Australia?

Bottling in Australia helps us reduce costs, lower our carbon footprint and keep supply reliable. Shipping in bulk avoids breakages and unnecessary weight, and storing tequila in ATO-approved bonded facilities means we can bottle it as needed, keeping supply steady and costs fair.

On top of this, we work with Australian businesses for bottles, labels, closures, boxes and the bottling process itself, supporting local jobs while delivering authentic Mexican tequila.
